Food Hygiene and Technology of Food of Animal Origin

The Department of Food Hygiene and Technology of the School of Veterinary Medicine includes the disciplines of Food Hygiene of Food of Animal Origin, Food Technology of Food of Animal Origin and Milk Hygiene and Technology. The academic members of staff that work in the three Laboratories that constitute the Fourth Department dedicate their teaching and research activities to microbiological, chemical and technological aspects of Hygiene and Technology of Food of Animal Origin.

The academic members of staff that are especially working on Food Microbiology are experienced and suitably trained in all aspects of Food Microbiology. Their work in this area of research focuses in the isolation and identification of microorganisms of interest in Food Safety (obligatory, potentially pathogenic and starter cultures), both with classical methods and with molecular methods (PCR).

The members of academic staff that are especially working on Food Chemical Analysis are experienced in the detection and quantification of veterinary drug residues in foods of animal origin but in the physicochemical method development for such analyses as well. Research is also carried out on the quality control of foods using modern instrumental techniques for analyzing vitamins, lipids, aminoacids, proteins and other food constituents, and on the safety of shellfish from biotoxins (DSP, ASP, PSP).

All three Laboratories are fully equipped (PCR, HPLC, GC, IR, etc.)
