Hygiene and Technology of Food of Animal Origin

The 4th Department includes the Laboratories of Animal Food Products Hygiene – Veterinary Public Health, Technology of Food of Animal Origin, and Safety and Quality of Milk and Dairy Products.

Teaching is focused on the following subjects: microbiological, chemical and technological – biotechnological aspects of the Hygiene, Safety and Technology of Food of Animal Origin.

Research is focused on the following subjects:

Food Microbiology: isolation and identification of microorganisms of interest to foods (pathogens, spoilage microorganisms and starter cultures), by conventional and molecular methods; study of their behavior in foods of animal origin and investigation of their microbial resistance.

Food Chemical Analysis: development of physicochemical methods for the determination of veterinary drug residues and other chemical contaminants in foods of animal origin; quality control of foods using instrumental techniques for analyzing vitamins, lipids, amino acids, proteins and other food constituents.

Food Technology – Biotechnology and Industrial Fermentation Technology: research on Lactic Acid Bacteria, yeast and fungi that are involved in food fermentations; production of various metabolites (antimicrobial peptides, enzymes, organic acids, antibiotics) in fermentations from the prism of microbial physiology to the side of biochemical engineering; optimization of process productivities is seen as a goal of genetic manipulation of the respective microorganisms as well as a goal of culture manipulations by means of modes of culture.

All three Laboratories are fully equipped (bioreactors, HPLC, GC, IR, UV-Vis, PCR, microscopes, image analyzer etc.)
